Has this summer flown by or is it just me?  I seriously cannot believe that Labor Day is this weekend.  Labor Day kind of marks the end of summer; however, school started this week in most of the areas around here, so technically, the party’s over for them.  But for the stay-at-home parents, the party’s just getting started, baby!!  This one’s for you!  Besides, the steamy weather won’t let up for several more weeks, so we still have plenty of time to enjoy a frosty beverage.

As I mentioned before, we came across a boat load of peaches not too long ago.  Actually, we didn’t come across them so much as we drove three hours to hunt them down.  But who’s keeping tabs, huh?

I put these peaches to good use and made several things, including this peach cobbler.  There were a few stragglers laying around and I didn’t want them to go bad before we had a chance to enjoy them, so I peeled, sliced and froze them.  A few weeks ago, my girlfriend, Katy, came over to lounge in the sun with me, so I figured we’d break out the peaches and tequila.

This is what you need:

First, zest a lime and let it rest for a few minutes so it can dry out a bit.

Then mix the zest with a few tablespoons of sugar.  We’re going to dress up the rim of the glass with this.  You could also use kosher salt if you prefer.  I don’t prefer, so that’s why I used sugar.  You could also live on the wild side and leave your rim naked.

Toss the frozen peaches and some ice into a blender.  You can totally use frozen peaches from the store; I just wanted to use our leftovers.

Then add in some fresh lime juice…

And a little sugar.  The sugar is optional, but it takes off a little of the bite from the tequila.  If you’re using the bagged frozen peaches, a lot of times they add sugar, so you probably won’t want to add any.

Next, pour in some tequila…

And a splash of triple sec.

Then let ‘er rip!!

Now, run a lime over the edge of your glass…

And take it for a dip in the lime sugar.

Ingredients
  1. 3 cups sliced, frozen peaches
  2. 3 cups ice
  3. ⅔ cup tequila
  4. 2 tablespoons triple sec
  5. ¼ cup sugar, divided
  6. 5 limes
Instructions
  1. Zest one lime, and on a small plate, stir together the lime zest and 2 tablespoons of sugar. Set aside.
  2. Blend together the peaches, ice, juice from 4 limes, tequila, triple sec and remaining 2 tablespoons of sugar (if using the sugar).
  3. Slice the remaining lime into wedges.
  4. Before pouring the margarita into glasses, run a wedge around the edge of your glass and dip the edge of the glass into the lime sugar.
