I just flew in from Miami and, boy, are my arms tired.  Did I just say that?  Apparently, my husband’s old man humor is rubbing off on me.  I did just get back from a blogging conference in Miami, BlogHer Food ’14.  While I was there, we had the opportunity to experience several local cuisines and recipes, many of which I plan on recreating.

We originally planned to go to Key West after the conference, but the timing didn’t work out.  That didn’t stop me from singing “Cheeseburgers In Paradise” all weekend.  (As well as Will Smith’s “Miami.”  How can you not hum that song while bopping your head around and doing the White-Man-Overbite?  Bievenido a Miami, baby!)

I don’t know about you, but I’m not a fan of going to the doctor.  Or dentist.  Or palm reader.  Just kidding, I don’t have a palm reader.  I can read my own palms.  It’s not necessarily the doctor or dentist that I’m not too keen on; it’s the waiting.  I realize that waiting for the doctor or dentist is just a fact of life, but that don’t mean I gotta like it!  (Pardon the grammar.  My country roots come out when I get fired up about things.)

However, every now and then something magical happens during these waits.  After perusing through my email and exhausting my News Feed, I resort to flipping through a magazine sitting in the rack.  And occasionally, there happens to be a jewel buried in it.

So, you’re wondering what dessert to serve at your Cinco de Mayo party, aren’t you?  Blondie to the rescue!  This is the perfect way to top off the event.

My girlfriend, Ashley, introduced me to these insanely yummy tidbits a few years ago.  She hosted a dinner party and to finish things off she brought out a tray of these bad boys.  What’s that you say?  “Sopapillas AND cheesecake”?  Why, yes, I will!

If you’ve never had a sopapilla, you’re missing out.  Most Mexican restaurants bring them out after your meal, just when you can’t put another crumb in your mouth.  But somehow you do once you get a whiff of the tempting puffs.  They’re fluffy, pillowy deep-fried pastries that are rolled in cinnamon sugar.  And then to top it off, they’re drizzled in honey.  The honey is optional, but not really. 

When the brilliant idea of combining sopapillas and cream cheese was brought to my attention, I knew it was fate.

Hola! Here we are with the second installment in the Cinco de Mayo series. My, that sounds official. It’s not really a series. Just another Mexican recipe that I want to share with ya. If you’re good, I might share another one later. (You like the teaser?) Did you know that May 5th is also National Hoagie Day, Oyster Day, National Chocolate Custard Day and National Cartoonists Day? Just in case you need another reason to celebrate.

In just a few weeks we’ll be celebrating Cinco de Mayo (also know as the fifth of May for the gringos).  For the longest time, I had no idea what the actual celebration was about. I just knew it was a great excuse to slurp on margaritas and plow through enchiladas. However, after a little research, I learned that Cinco de Mayo is a holiday that celebrates the Mexican army’s defeat over France in the Battle of Puebla. It’s mostly celebrated in America and it’s not really a big deal in Mexico.

Hey, I’ll celebrate that. As long as margaritas are present. And enchiladas.

Have you ever seen something on tv that you just HAVE to HAVE?  I’m not talking about a Flowbee, Pocket Hose or a Snuggie, tempting as they may be. I’m talking about something that makes your mouth water so bad you’re a slobbering ninny. Something that makes you willing to hitchhike to get it.  Or ride cross-country clutching onto Lloyd Christmas on the back of his mini-bike to reach this coveted treat.

What’s up, party people?!  I’m sorry I’ve been away so long, but if it makes you feel any better, I’ve missed you all.  We’ve had a busy few weeks lately.  We’ve been traveling and celebrating a certain someone’s 2nd birthday.  That’s right… Peanut turned TWO!  I can’t believe this little monkey is already two years old!
