I’ve been on a bit of a cookie kick lately.  Not that anyone is complaining.  Actually, my rear end might have a problem with it.  The cookie fascination actually works out pretty well though, because I’m participating in Cookies for Kid’s Cancer.

Every year OXO teams up with bloggers all across the country to raise money for Cookies for Kids’ Cancer. For every cookie recipe post written in September, OXO will donate $100 to their Good Cookie campaign.  Cookies for Kids’ Cancer was founded by two OXO employees inspired by their 2-year old son’s battle with cancer.  The charity provides annual research grants to five of the nation’s leading pediatric cancer centers to advance the development of less toxic, more effective treatments for children battling cancer.

Where has the time gone?  Seriously?  I know I keep saying that, but I’m going to say it one more time:  this year is flying by!  I feel like someone pressed fast forward on the time machine.  I don’t really have a time machine, but I sure wish I did.  The first thing I’d do is go back to first grade and see who stole my Popples lip gloss out of my back pack.  I’m clearly still scarred by that travesty.

Back to the present.  These chocolaty, nutty, cakey, crack-like little devils are amazing.  And when I say crack-like, I mean they’re highly addictive.  Extremely.  I think I may need to sign up for a 12-step program if I can’t go cold turkey.

Salt River Bars

I came across these bad boys on Pinterest.  Pinterest is my new addiction.  I know, I know… I’m a little slow on the uptake, especially when it comes to technology.  Seriously.  It’s a near miracle that I’m even able to buy an app, let alone put something out on The World Wide Web.  Just to give you a little more insight into how technologically unsavvy I am:  in high school, my grandma actually had to show me how to download music and burn cds.  My grandma, people!!

Anyway, back to these suckers.  Apparently, there’s a little restaurant, Liberty Market, near the Salt River in Arizona that created these crazy things. I’ve never been to Liberty Market and I usually don’t try to recreate recipes when I haven’t tried the original, but they looked too good not to try.  Besides, I’ve floated the Salt River, so that’s close enough, right?

Has this summer flown by or is it just me?  I seriously cannot believe that Labor Day is this weekend.  Labor Day kind of marks the end of summer; however, school started this week in most of the areas around here, so technically, the party’s over for them.  But for the stay-at-home parents, the party’s just getting started, baby!!  This one’s for you!  Besides, the steamy weather won’t let up for several more weeks, so we still have plenty of time to enjoy a frosty beverage.

Antipasto Pasta Salad

Do you ever crave chicken legs?  More specifically, BARBECUE chicken legs?  I’m not talking the little drummette things.  I’m talking about the full size bad boys.  A few weeks ago, barbecue chicken legs were all I could think about… thoughts of the sweet sticky barbecue sauce slathered all over the moist dark meat legs were consuming my every thought.  Mmmmm.  Mr. Man was so accommodating and whipped some up for me.  (I think he likes me.)

Why am I rambling about chicken legs when I’m supposed to be sharing a pasta salad recipe?  Good question.  I wanted to make a side to go with the chicken legs, and this salad came to mind.  It has all the flavors that are on an antipasto plate, hence the name.

Anywho, back to a few weeks ago. We called a few friends over to share our chicken legs and pasta salad, and they called a few friends, and what started as a small Sunday Funday gathering ended up as an impromptu pool party.  I fully anticipated having plenty of pasta salad to snack on throughout the week, considering I made a trough of it.  However, we managed to polish off the entire bowl.  So that left me with only one option: make more!!

A few weeks ago, we took a little trip out to East Texas to see Mr Man’s dad and stepmom.  We try to get out there to see them a few times a year, but it’s a must to go during the summer.  Why?  For the peaches and tomatoes, of course!  East Texas is known for their lakes and fishing, as well as their peaches and tomatoes.  I don’t know what it is about the area, but they produce some of the best peaches and tomatoes.

I hope everyone is enjoying their summer.  It’s actually been a cooler-than-normal summer here in Ft. Worth.  The weather has actually been kinda bizarre lately:  we only got up to 71° a few days last week!  That’s down right chilly!

What’s not chilly?  Mimi’s beans!  Mr. Man’s mom, MiMi, makes these beans whenever there’s a cookout going down.  She and Pops (or Potch, as Peanut calls him) host some pretty delicious parties and these beans are usually in attendance. 

I always ask MiMi what she does to make these things so dang tasty, and her normal response is usually a vague, “Oh, a little of this and a little of that.”  Until one day a few weeks ago.  I think I finally beat her down.  Actually, I think she was having pity on me.  Either way, I came out with the secret recipe to these bad boys, and now I’m sharing it with you!  Mwah-ha-ha-ha-ha!!  (Insert villainous laugh.)
